Borscht is one of the most popular soups in Eastern European cuisine.

Today we will share with you a recipe for classic borscht, which is prepared in canteens.
First, you need to soak the beans. Take 1 cup of white beans, soak them in cold water for at least 8 hours, preferably overnight.
This will help the beans soften and become tender. After soaking, drain the water and rinse the beans.
Now let's make the broth. Pour 1.5 liters of water into a saucepan, add 300 grams of beef ribs, 1 onion, 1 carrot, salt and pepper to taste. Cook over medium heat for about 1.5 hours until the broth becomes fragrant. Strain the broth through a sieve and set the ribs aside for later use.
Now let's get to the vegetables. Grate 2-3 medium carrots and 1 large beetroot on a coarse grater. Cut 1 large potato into cubes. Chop 1 onion and 1-2 cloves of garlic. Fry the onion and garlic in vegetable oil until golden brown.
Add carrots, beets and potatoes. Fry the vegetables for 10-15 minutes, stirring. Then add tomato paste, it is better to take homemade from tomatoes. Then put the beans and pour the vegetables with hot broth.
Now you need to add spices. Put 3-4 allspice peas, 3-4 bay leaves, 1 teaspoon of ground coriander. Salt and pepper to taste. Cook the borscht over low heat under the lid for another 30-40 minutes. During this time, all the ingredients will mix into a rich, aromatic broth.
The last step is adding meat and seasoning the borscht. Remove the boiled beef ribs and separate the meat from the bones. Cut it into small pieces and add to the soup 10-15 minutes before it is ready.
Traditionally, borscht is seasoned with sour cream. Whisk 200 grams of sour cream with 1 tablespoon of flour until smooth. Pour the sour cream into the soup in a thin stream, stirring constantly. Bring to a boil.
At this point the borscht is ready! Pour it into bowls and sprinkle with finely chopped herbs - dill and parsley.
