The immersion method is based on the principle of buoyancy. A fresh egg has less air space and is heavier than older eggs due to the smaller volume of air space inside the shell.

When it is submerged in water, the fresh ones will lie on the bottom while the older eggs will float.
Why do eggs float?

In fact, the answer to this question is obvious, because if eggs start to spoil, an air cavity starts to form inside. And if the egg floats to the surface very quickly, then it is definitely not worth eating.
