The following tricks will help you recognize a fresh product.

For salting, you should choose fat from the back or sides, the thickness of which should be at least 2.5 cm. In no case should you take pieces cut from the peritoneum or along the spine: such fat is almost always hard.

Pay attention to the color. A fresh product is white or soft pink, but any shades of gray or yellow indicate that the product is not fresh.

The softest lard always has a thin skin of a yellowish or pinkish hue, which ideally should be resinated.
