Another trick is to use only young zucchini. This will guarantee a delicate taste of the finished dish.
You can also make caviar lean: to do this, simply stew the zucchini in its own juice without adding oil.
If you want the caviar to have a smooth texture, then you need to add golden-fried flour to it. For 1 kilogram of vegetables, 1 tablespoon of flour is enough.
