Cut 1 kilogram of lard with a layer into 10-centimeter pieces.
Make a marinade from 1 liter of water, 5 tablespoons of salt, 2 tablespoons of sugar, 5 crushed bay leaves and 7 allspice peas. Mix the ingredients thoroughly, bring the marinade to a boil and simmer for 5 minutes.
Dip the lard into the resulting solution and secure it with a weight. After 24 hours, put the lard in the refrigerator for two days.
After this time, pour out the marinade and rub the lard with a mixture of peppers and three crushed cloves of garlic. Each piece should then be wrapped in cling film and put in the freezer for 3 hours.
