One of these old proven recipes is the recipe for delicious adjika. It can be adapted to the different taste preferences of household members. Some people make it bitter, while others make it sweet with a slight hint of bitterness.

To prepare you will need the following ingredients:
• 5 kg of red tomatoes (plum tomatoes are better);
• 3 kg sweet red pepper;
• 0.5 kg onions;
• 0.5 kg of any apples;
• 3-4 pods of hot red pepper;
• 250 g garlic;
• 300 ml odorless vegetable oil;
• 3 medium bunches of parsley or cilantro;
• 3-4 tablespoons of sugar;
• salt to taste.
Wash, peel and cut tomatoes, hot and sweet peppers, apples into pieces of a size that will be easy to grind in a meat grinder.
The carrots need to be grated on a coarse grater, and the onion finely chopped.
Fry the carrot and onion mixture in a frying pan until half cooked.
For those who prefer uniformity, the onion and carrot can simply be minced along with the other ingredients.
After the vegetables have been chopped, add sugar, salt, vegetable oil and put on the fire. It is better if the pan is thick-walled so that the adjika does not burn.
Bring to a boil and cook for 2.5 hours, stirring occasionally.
At this time, peel the garlic and prepare the herbs.
Grind the ingredients in a meat grinder. Add to adjika 10 minutes before it is ready.

Pour the finished adjika into jars and wrap until completely cool.

Before the main volume of adjika is poured into sterilized jars, you need to cut the hot pepper pods into 2 large pieces and throw them into a saucepan with boiling adjika.
Boil for 5 minutes. Pour the adjika into jars, adding half a hot pepper to each.
