The result is something between toffee and crème brûlée - sweet, buttery, with caramel notes.

But why does it work? The secret is in the fat content of the butter and the sugar from the condensed milk. When whipped, they form an emulsion that hardens in the cold, preserving its airiness.

For adults, add a spoonful of rum or coffee extract—the alcohol will keep the dessert from hardening too much. For kids, add cookie crumbs or colored sprinkles.

And if you want a twist, drop vanilla into the mixture or add chopped nuts. The main thing is not to overdo it with whipping, otherwise the butter will separate. If this happens, add a spoonful of cold cream and mix again.

This dessert came from Soviet canteens, where it was called "butter mousse." Back then, it was served with fruit syrups, but today it can be made modern.

For example, layer it with berry puree or pour melted chocolate over it. This mixture also makes great truffles: roll into balls, roll in cocoa or coconut flakes and refrigerate.

Freeze them for a savory, high-end candy-like consistency that won't freeze, or spread them on crackers for a no-bake, instant cheesecake.
