Once you make delicious and healthy sourdough pancakes, you won't want to mess around with yeast anymore.
And the ready-made sourdough will always be at hand. It can also be used when baking homemade bread.
Preparing the sourdough
Day 1. In a 2-liter container, pour 150 grams of water, the temperature of which should not exceed 40 degrees, and while stirring, pour in flour - you should get a substance resembling condensed milk, says Yulia Arkhipova .

Cover the jar with a cloth to allow air to enter and leave it for a day, but be sure to do so in a dark, warm place (the necessary bacteria do not form in the light).
Day 2. Add another 150 g of water with a spoon of honey (or sugar) dissolved in it to the mass. Add flour, again bring to the consistency of condensed milk. And return to a warm place for 12 hours. During this time, the future starter will rise in the jar and bubble.
Add the same amount of water and flour again and wait the remaining 12 hours.
In order not to spend a lot of time preparing the starter each time, you can dilute it. Pour out about five spoons of the ready starter, add flour and water as described above, and you can leave it in the refrigerator until the next pancakes.
Making pancakes
For the simplest pancakes, you need to pour the starter into a large bowl. Then, in a glass of warm water, dilute a spoonful of honey (or sugar) and a little salt so that the dough is not too bland – pour the solution into the starter.
Next, pour in a large spoon of your favorite vegetable oil. If desired, you can add various herbs and additives and mix everything thoroughly. Now you can sift flour into the liquid until you get pancake batter (adjust the thickness of the batter as desired - the more flour, the thicker the pancakes).
The finished dough should stand for about three hours and can be fried in any way convenient for you. As a result, you treat your guests with delicate, thin pancakes.
You can bake pancakes with sourdough using fermented milk products. To do this, take a glass of fermented milk product (yogurt, whey, kefir, etc.) for 2 spoons of sourdough, add 1 tbsp. sugar and about half a glass of flour. Stir until smooth and leave in a warm corner for 2 hours.
Then add 2 cups of water heated to 35 degrees, pour in 2.5 large spoons of vegetable oil, 3 cups of wheat flour (can be mixed with other types of flour) and leave for another two hours in a warm place.
And then bake the pancakes on a hot frying pan in the usual way. The first few times it is better to grease the bottom of the frying pan with fat.
The finished pancakes can be greased with melted butter and wrapped with any filling.
