The Secret Ingredient for Okroshka
To prepare a delicious summer soup you will need:
- 3 potatoes;
- 3 chicken eggs;
- 3 medium sized cucumbers;
- 5-6 radishes;
- boiled sausage (about 250 g);
- half a teaspoon of salt;
- a pinch of ground black pepper;
- greens (dill, parsley, green onions);
- kvass;
- The secret ingredient is a tablespoon of mustard.
Boil the eggs for 7 minutes, boil the potatoes in their skins until done.
Cut the radishes and cucumbers, chop the greens, and put them in a saucepan. Add the chopped sausage, eggs, and potatoes, salt, and pepper.
Add a little kvass to a tablespoon of mustard and mix thoroughly until the mustard dissolves.
To serve one portion, you will need about a third of the resulting mixture and mustard dissolved in kvass. The dish is poured with kvass and served cold, seasoned with sour cream.
