Why mushrooms taste bitter

If the dish turns out bitter, then mistakes were made at the stage of preparing the mushrooms for cooking. It makes no difference whether you cooked fresh mushrooms or took frozen ones.

In addition, the type of mushrooms you are dealing with is also important. For example, chanterelles need to be processed on the day of collection. It is enough to put them in a colander and blanch for 5-7 minutes.

To prevent chanterelles from becoming bitter, experienced housewives resort to the following life hack. Mushrooms are soaked in milk for at least 2-3 hours. Moreover, the liquid should completely cover the chanterelles immersed in it.

Before freezing, mushrooms must not only be thoroughly cleaned of any debris, but also soaked in cold water.

But the tricks don't end there, because mushrooms should be defrosted correctly. To do this, soak the product in water with one tablespoon of salt and a few pinches of citric acid.
