Journalists drew attention to this soup when they were studying the characteristics of people living in the “blue zones” of the Earth.

These are regions where the average life expectancy of a person is several times higher than in many prosperous countries.

There are 5 such zones: Okinawa (Japan), Ikaria (Greece), Nuoro Province (Italy), Nicoya Peninsula (Costa Rica) and Loma Linda (California, USA).

Recipe

To prepare the soup for long-livers, you will need potatoes, carrots, onions, celery, garlic, tomatoes, celery, vegetable broth, a can of beans or chickpeas, pasta or pearl barley, basil, parsley or other herbs to taste.

Cut the vegetables into cubes. Put the pan on the fire and fry the garlic and onion in it for 3 minutes with the addition of 2 tbsp. of water.

Next, add celery, carrots, potatoes, and salt. Simmer for about 5-6 minutes until the potatoes and carrots are slightly soft.

Then pour in the vegetable broth, add tomatoes, beans (chickpeas) and pasta (pearl barley). Bring the dish to a boil, then reduce the heat and cook for another 12-15 minutes.

Finally, sprinkle with herbs and enjoy this incredibly healthy dish.
