Ingredients

  • To prepare 200-220 grams of soft cottage cheese we will need:
  • Kefir - 1 liter (choose fat content according to taste).
  • Freezer.
  • Colander.
  • Thick fabric or non-woven napkins in 2 layers.

Recipe

Cottage cheese from frozen kefir is very easy to prepare. The steps are very simple.

Buy kefir of the fat content that suits you in a plastic bag (Important! Not in glass packaging!).

Place a bag of kefir in the freezer and freeze until it becomes an ice block. It took me 6-7 hours to freeze 1 liter of kefir.

Prepare a saucepan where the whey will drain, a colander and a thick cloth. You can use gauze, but in 3-4 layers. It is better to take a thick cloth or non-woven disposable napkins in 2 layers.

Take the frozen package of kefir out of the freezer.

If you have a large colander, simply remove the frozen kefir from its packaging and place it in the colander.

If the colander is small, then, without removing the packaging, hit the frozen package of kefir on the table a couple of times, remove the packaging and break or saw with a knife into several pieces. Transfer to a colander covered with a thick cloth and leave for 12-14 hours.

During the defrosting process of kefir, the whey flows into the saucepan, and the most delicate, soft and dietary curd is formed on the surface of the fabric.

The defrosting process takes about 12-14 hours at a temperature of 20-22 degrees in the apartment. The whey can be used to make pancakes.
