Everyone eats it, but not because it is very tasty, but because “soup is good for your health”, “it is the most economical dish”, “a spoonful for mom, a spoonful for dad” and so on.

It is not easy to prepare a tasty and healthy soup, but it is possible. You just need to follow some conditions:

1. The soup will be tasty if you cook it in small quantities. Nowadays, this is not a problem, since families are mostly small.

2. The pot in which the soup is cooked plays a very important role. In no case should you cook soup in a metal (non-enamelled) pot. The pot should have thick walls.

The soup should not boil, but simmer.

Cooking takes quite a long time and "ties" the hostess to the stove. You have to be near the pot all the time: remove the scale, gradually add products and taste the soup.

2. Fresh products and well-cleaned vegetables. Vegetables should be washed not only from dirt, but also remove all foreign odors. Everything must be thoroughly washed, cleaned and dried.

3. Pay special attention to the shape of the vegetable cuts. If the recipe says to cut the carrots into strips and the potatoes into cubes, then do so.

4. The order of adding the products must be strictly observed according to the recipe. Each product has its own cooking time and experienced cooks know it.

5. You need to salt the soup when all the ingredients have just been cooked. In this state, they are able to evenly absorb the required amount of salt.

6. Seasonings are also added at the end of cooking the soup.

7. When the soup is ready, do not rush to pour it into bowls. Every good housewife should have a porcelain tureen. The soup is poured into the tureen not only for the sake of aesthetic appearance, but also to mix the liquid and thick parts.

The soup becomes more rich. Let your soup stand for about ten minutes under the lid. The spices and salt will evenly saturate all the products in the soup.

8. Pour the soup with an enamel, porcelain or wooden ladle. Add the greens to each person's plate individually.

9. Soup is a very privileged dish, as it is eaten only immediately after cooking. Reheated soup loses its taste and you have to force yourself to eat it.

10. But there is a wonderful first course – shchi. They only become tastier the next day!
