Why does pasta stick together after cooking?
Pasta contains starch and gluten. Both of these ingredients are responsible for the stickiness.
Since starch is released into the water during cooking, the pasta sticks not only to each other, but also to the sides and bottom of your pan.
However, don’t rush to throw out the side dish: the situation can be corrected.
We proceed as follows:
- drain the water from the pan and rinse the pasta thoroughly under running water;
- add ice cubes to the garnish and continue rinsing.
As a result of exposure to cold water and ice, the structure of the finished dish will change and they will separate from each other.
All other shortcomings of the finished dish can be masked with the help of gravy or sauce.
